
Stop Drying Out Your Pastries
Ever notice how a croissant looks perfect under a heat lamp, but the second you bite into it, it’s dry as a bone? Or maybe the outside is scorching, but the middle is still cold. It’s frustrating. Most standard heaters just blast the air, which basically sucks the moisture right out of your food. We do things differently. We use shortwave infrared (IR) tech. Instead of heating up the air around the pastry, this energy goes straight to the food. By getting the wattage and the focus just right, we stop that annoying “crusting” effect. Your tarts and pastries stay at that perfect serving temperature, but they keep the moisture inside where it belongs. The nitty-gritty on the hardware We make these replacement lamps out of high-purity quartz glass. Why? Because it can handle being turned on and off all day without cracking. We also use halogen-filled tubes so the filaments actually last. If you’re swapping these into an old rack, just double-check your connectors. We usually stick with R7s or SK15 bases so they just drop right in. One big tip:**match your voltage to your transformer.**If you get this wrong, the lamp will either be weak or—more likely—it’ll burn out in a few hours. Not a great way to start a shift. A few things to keep in mind High-density IR lamps are fantastic for busy counters because the heat is instant. But that intensity puts a lot of stress on the housing. Make sure your vents are clear. If the heat gets trapped in the fixture, your quartz tube is going to die a lot faster. Plus, give your reflectors a quick wipe once a month. A dirty reflector wastes energy and forces the lamp to run way hotter than it needs to. Keep it clean, keep the air flowing, and your pastries will stay fresh.
