
Getting Your Bread Oven Temperature Exactly Right
Baking bread is all about the details. If your oven temperature swings by just a few degrees, you’re looking at a mess—crusts that are too dark in some spots and centers that are still doughy. It’s frustrating. That’s why we use short-wave infrared lamps. They’re all about speed and raw heat.
Why Speed Matters
Think about standard heating elements. They’re bulky. They take forever to heat up and just as long to cool down. By the time they react, your bread is already overdone. Our infrared lamps are different. They hit the target temperature almost instantly. This lets your controller make tweaks in real-time without that annoying lag you get with convection or resistive heat. We’ve put our gear head-to-head with the big international brands, and the numbers don’t lie: the stability is right there.
The Hardware Side of Things
Most of our lamps use a quartz envelope filled with halogen gas. Why? Because it keeps the filament from burning out too fast, so you aren’t replacing bulbs every other week. Depending on the size of your oven, you can pick the length and shape that fits your footprint. Plus, we use standard connectors like R7s or Sk15. We did this on purpose. You shouldn’t have to rip out your entire control panel and rewire everything just to get better heat. You just pop them in.
The Catch (And How to Fix It)
Here’s the thing: high-wattage lamps put out a ton of heat. It’s perfect for getting that professional sear on a crust, but it’s hard on your reflectors. If your reflectors get dirty or pitted, you’re wasting heat. It just doesn’t bounce back onto the bread. To keep things precise, you’ve got to keep those optics clean. We built these to survive the humidity and grime of a working bakery. They’re tough. They hit your set point and they stay there.
