
Stop Heating the Air: A Better Way to Warm Bread
Let’s be honest about traditional convection ovens. They’re energy hogs. You spend all that power heating up a giant metal box and every cubic inch of air inside it, just to get a few loaves of bread warm. It feels wasteful because it is. That’s why we’ve moved toward shortwave infrared (IR) emitters. Instead of fighting the air, we just aim the energy straight at the bread. It’s the simplest way to actually build a “green kitchen” without sacrificing quality. The magic of radiant heat Here is how it works: IR emitters turn electricity into radiation. Unlike hot air, which drifts around, these waves move in a straight shot and soak right into the surface of the bread. It’s fast. Really fast. You can forget about that hour-long preheat where you’re just waiting for a massive chamber to get up to temp. We use quartz envelopes on our emitters to keep the heat concentrated. Plus, you can tweak different warming zones on the fly. No more burnt edges and a frozen center. Getting the setup right When you’re actually wiring this thing up, you have to keep an eye on power density. High-wattage IR tubes get incredibly hot in one spot. To make it work, your reflectors need to be spotless. We use polished aluminum or gold-coating to bounce that heat downward. If your reflectors get dirty or pitted, your efficiency just tanked. It’s that simple. There is one tricky part, though: the frame. While the IR lamp hits top speed in seconds, the metal chassis of the oven takes its time. This creates a temperature gap. You’ll need to dial in your PID loop carefully, or you’ll end up scorching the crust before the inside is even warm. The trade-off Now, it isn’t perfect. IR warming is faster and cheaper to run, but it doesn’t “hug” the bread the way hot air does. If your bread has a weird shape or deep folds, you might find a few cold spots. But there’s an easy fix. Just use a few more emitters or put the bread on a conveyor belt. That way, every side of the loaf gets hit by the radiation, and you get a perfect, warm result every time.
